During auspicious occasions, the Assamese cook joha rice, into kheer,
pulao, jolpan. Boiled rice is delicious with dal, vegetables, as curd rice or khichadi. Ideal for Risotto.Clay Pot Recipe: Take 1 bowl of rice, Wash. Soak in clay pot in 3 times more water than quantity of rice for 10 mins to 1 hr. Use same water for cooking. Add 1 tsp Taru Gir Cow Ghee , salt to taste, bay leaves and spices. Cover with clay dhakkan. Switch off gas with little water remaining. Leave covered.
Recipe for Sweet Rice Dessert -
Wash & Soak Rice overnight or 4 to 8 hours. Then boil for about 10-15 minutes. Add fresh Coconut, Jaggery, Cardamom powder and 1 tsp Ghee. Mix & Serve.Reduces risk of cardiovascular diseases, inflammation & allergy. Rich
in flavonoids. Contains essential amino acids or plant- based protein for vegetarians or vegans.Once packet is opened, store in glass jar or air tight plastic jar. Consume quickly or Refrigerate. Residue-free produce catches weevils easily. Composting produce is the best option if spoiled.
