Hulled Buckwheat is an Ancient Pseudo Millet, locally known as
‘Kuttu’ grown across Himalayan regions.Buckwheat is sourced from Mahila Umang Women’s FPO in Uttarakhand. Umang is Community owned Enterprise by Small Scale Women Farmers, to promote Ecology, Equity, Fair Trade Economics for Himalayan Farmers. Founder,Ruchi Jain -Taru Naturals, conducted Natural Farming training for women farmers.Climate resilient, indigenous seed, grows in less water, low fertile soil.

Traditional Sweet Buckwheat Gulgule (to brighten up fasting days and add healthy flavours to festivals) -
Mix 1 cup Taru Kuttu Buckwheat Flour in 1 cup water. Mix 2-3 tbsp Taru Jaggery & 1 tsp Saunf. Add 1 tbs Taru Cold Pressed Oil or A2 Ghee. Cook till it forms a ball, stirring all the while. Now break off into sections & shallow fry on the tawa with some ghee.
Recipe to Make Buckwheat Biscuits - Mix 1 or 2 tbsp Ghee/Oil in 1 cup Buckwheat flour, till it resembles Bread Crumbs. Add 1 tsp Cinnamon Powder, 1 tbsp Mixed seeds, Dried Berries, Nuts, ½ cup Jaggery Powder. Make a stiff Dough with Milk/Vegan Milk/Water. Roll into Rounds, Prick with a Fork. And Bake in an Oven at 180 degrees for upto 5 mins. Flip Biscuits & Bake for another 5 mins or more till done.Rich in complex carbohydrates & dietary fiber. Rich source
of proteins, Vitamin B & Minerals. Excellent source of magnesium, improves circulation & helps to protect against heart disease. Controls blood sugar & ideal for diabetics. A regular diet of buckwheat prevents gallstones. Rich in anti-oxidants & flavonoids. (Singh et al, 2016)Once packet is opened, store in glass jar or air tight plastic jar. Consume quickly or Refrigerate. Residue-free produce catches weevils easily. Composting produce is the best option if spoiled.
